It's the native olive cultivar of the Valle del Belice, in western Sicily — the same valley where we grow, in Campobello di Mazara (TP). Ours is a single cultivar: only this olive goes into the bottle.
On the palate it gives a green, fruity taste with the typical notes of tomato, artichoke and freshly cut grass. We talk about it more on the Tasting page.
They are three different certifications, and they say different things. Briefly and honestly:
DOP Valle del Belice (since 2004): olives grown and oil produced within a defined area, following rules tied to the Nocellara. IGP Sicilia (since 2016): guarantees the oil is Sicilian, with broader rules across the whole island. Organic: concerns the growing method, without synthetic chemicals, verified by a certification body.
None of the three, on its own, tells the whole story: that's why we carry all three.
From the moment the olive leaves the tree, aromas and polyphenols start to break down. That's why we take the olives to the mill and press them within 6 hours of harvest, with cold extraction below 27°C: higher temperatures would yield more, but at the expense of aromas and quality.
Bottles (from 100 to 500 mL): for the table and raw use; the dark glass protects the oil and the 100 mL is perfect as a first taste. Bag-in-Box (3 and 5 L): for everyday cooking; the pouch protects from light and air, so the last drop is as fresh as the first. Gift box (500 mL): 500 mL bottle with a presentation case.
You'll find them all in the catalogue.

Away from direct light and heat sources (stovetops, oven, windowsills), with the cap tightly closed after each use: light, heat and air are the three enemies of oil. A cool, dark pantry is the perfect spot.
No. At low temperatures extra virgin olive oil can turn cloudy, hazy or thicken: it’s a natural and completely reversible phenomenon. Bring it back to room temperature and it will turn clear again, without losing anything in quality.
On the label you'll find the best-before date (TMC): it's not a hard expiry, but the date by which the oil is at its best. A well-kept oil stays good, but gradually loses freshness and aromas.
