The annual appointment with the "Nocellara del Belice" olive harvest has finally arrived. In fact, after a long year that started with the winter pruning of the olive trees, continued with the care of the soil carried out at various times of the year up to irrigation and disinfestation in the summer, now it's time to harvest!

Before starting, we monitored our olive groves to identify the areas where the olive trees are most loaded with olives. In this way we have chosen the sequence of the harvest to start from those areas where the olive trees are less loaded and therefore the olives arrive first at full ripeness.

For the harvest we are using a manual technique through which we detach the olives from the tree, letting them fall to the ground on top of the nets spread out on the ground.

On the other hand, in olive groves with a greater number of olives per tree we will use a mechanical harvest by means of a harvester, a tool that vibrates simulating the manual action of poles or rakes and of the underlying nets on which the olives that they detach themselves gradually accumulating.

After completing the harvest of the olive trees under which the nets have been placed, the olives are transferred to crates or larger boxes and then transported to the mill.

To preserve the quality of the olives and prevent degradation phenomena that can affect the quality of the oil, milling takes place within 48 hours of harvesting.
